Centuries ago, in the colorful streets of Puebla, México, a culinary legend was born that today we know as Mole Poblano, an exquisite blend of flavors and cultures that has become the epitome of gastronomic miscegenation and an unparalleled treasure of Mexican cuisine. The history of Mole Poblano dates back to colonial times, when the European influence merged with indigenous roots; the native chiles of these lands were mixed with ingredients brought from the Old Continent, such as almonds, raisins and spices. It was in Puebla where this culinary fusion reached its maximum expression. Pasilla, Ancho and Mulato chiles are mixed with toasted bread, raisins, sesame seeds, peanuts, plantains, cinnamon, chocolate and a touch of spices. All this is masterfully cooked in corn oil, sweetened with sugar and seasoned with salt. Legend has it that Mole Poblano was created by Sister Andrea, a nun from the Santa Rosa convent in Puebla, who sought to impress the archbishop with an exceptional dish. With divine inspiration and a dash of creativity, she combined these ingredients from two worlds to give life to this culinary masterpiece.
